Her distinctive approach to winemaking has piqued the interest of many, and in a recent interview, she shared insights into why locally-made wines make an exceptional choice for Christmas gifts. “we have so many options when it comes to ingredients and i wanted to pay respect to that, which is why it’s a good gift to give someone because it’s just not any and everything, its something thats indigenous to us, it’s something that is, we use in our everyday diet, all these different fruits, roots and spices.”

Herbert believes that by experimenting with local ingredients, individuals can discover vast possibilities and appreciate the unique flavors that surround them. According to Herbert, these wines can be used to create various cocktails, and she even teased a new product – a sorrel wine jelly designed to complement holiday ham.
