The Tobago Hospitality and Tourism Institute’s Chef, Vernice Lovelace, indicated that the goal of the cake showdown was to create wedding cakes with the theme “Bliss of the Caribbean.” Second-year students had to apply the knowledge they had acquired over the year to accomplish their final assessment.
THTI student Natalia Mohammad was inspired by the meaning and the challenges she faced in bringing it to life. “I wouldn’t say it was difficult but it had its challenges but it was about working around the challenges to get the results that you want or that you envision not everything will go to plan their are alot of thing that didn’t go to plan but is about being persistent and knowing what you want and going after it.
Another student, Tamkia Alfonzo, used butter carving to create a swan because there was a second part to the competition. Tamika mentioned that she will be creating butter carvings during the Christmas season as it is a fun new technique she learned at THTI. “It was difficult yes and no sculpting butter seems easy it is not as easy as it appears bellow the butter here we have styrofoam craved particularly to get the shape and though it appears beautiful it take alot of time.”
External professional judges evaluated the competition to offer students an unbiased and real-world standard of assessment. The results of the cake showdown will not be known until the students receive their final grades.
